I just watch the episode where a classic Chinese dish was prepared:
The competitor created the actual authentic dish.
Not one judge was Chinese to verify its authenticity and flavors.
The one judge said the noodles were under cooked The original dish had the noodles al dente.
The judges need to be better selected to know the authentic dish.
There wasn't a Chinese judge to verify the authenticity

Some of the so called and Mexicane wasn't dishes aren't what I grew up with etc. Black beans are not northern Mexican or blue corn which is Southwest US Typically Cuban.
