Well before Alfred Portale of New York City's Gotham restaurant went to culinary school, he was inspired by Julia Child’s cookbooks, which introduced him to the world of French cuisine. Of particular significance to Portale is duck, which was was one of Child’s favorite things to eat. In fact, Portale once did an entire meal using the bird on Child’s PBS show In Julia's Kitchen With Master Chefs. Here Portale reinvents Child’s traditional "Roasted Duck Casserole in Turnips" recipe from her book The Art of French Cooking Volume One (Knopf) by grilling the duck and adding peaches.
