When Uncle Jesse touches the percolator coffee pot it is hot, but it is sitting a stove with burner cover. Burner covers can not conduct heat. Therefore the pot would have cold coffee.
If you look closely when Cooter does a wheelie with his motorcycle in the Boar's Nest, you'll notice that there is a stuntman on the bike instead of actor Ben Jones. You can tell by the stuntman's lack of facial hair.

Boss tells a story that he placed his Mama's ashes in the racing trophy and sealed it tight. All prior shots show that the trophy is hollow, like a cup, and not sealed. BH.

Right at the beginning, the Balladeer proclaims the Hazzard County Obstacle Derby as "an illegal road race." Next line though, Sheriff Coltrane - the embodiment of the law, however ludicrously inept - announces the participants. This law-man even offers a big silver trophy, and five thousand dollars to boot, to the winner. Later on, a police squad car takes part in this 'illegal' race. The entire event had the blessing of the Hazzard County Police Department! The script was inspired by the theme of movies like Cannonball (1976) without paying attention to finer details.
When the brakes on Amy's car fail, she keeps going the same speed. Any competent driver, let alone a race car driver, could slow down, and even stop, by other means, such as downshifting, using the parking brake, or even shutting off the engine.
